🍴 Zucchini rolls 🥘

🛒 Ingredients 🛒
– 10 half tomato(s), dried
– 1 clove(s) of garlic
– 150 g mozzarella
– 4 tbsp Parmesan, grated
– 6 tbsp olive oil
– 500 g courgettes
– 2 tbsp breadcrumbs
– Basil, fresh
– salt
– Pepper

👨‍🍳 Preparation 👨‍🍳
Finely dice the tomatoes and garlic. Cut the basil into thin strips. Dice the mozzarella and mix everything together. Add 2 tbsp grated Parmesan cheese, 1 tbsp olive oil and season with salt and pepper.

Cut the courgettes lengthways into narrow slices (slicer, approx. 7 mm). Fry briefly on both sides in the remaining oil until golden brown. Drain on kitchen paper and season lightly with salt and pepper.
Spread the mozzarella mixture on each end of the courgette slices and roll up. Place side by side in a greased baking dish. Mix the remaining Parmesan with the breadcrumbs and sprinkle over the top. Bake in a preheated oven at 200 – 220° C for about 10 minutes.

Serve warm with a piece of ital. Serve warm with a piece of Italian white bread. They are also good cold. You can also use aubergines instead of courgettes.
