🍴 Veal with tuna sauce 🍴
🛒 Ingredients 🛒
1 kg of veal magatello
1 carrot
1 onion
1 celery stalk
1 bay leaf
1 sprig of rosemary
2 anchovy fillets in oil
2 tablespoons of salted capers
2 hard-boiled egg yolks
200 g of tuna in oil
200 ml of mayonnaise
200 ml of fresh liquid cream
extra virgin olive oil q.b.
salt q.b.
pepper q.b.
👨🍳 Preparation 👨🍳
Clean the vegetables and cut them into large pieces.
In a large pot put the vegetables, bay leaf and rosemary sprig.
Add the magatello and cover with cold water.
Bring to a boil and cook for about an hour and a half.
Drain the veal and let it cool.
Prepare the sauce: blend the tuna with the capers, anchovy fillets and hard-boiled egg yolks.
Add the mayonnaise and fresh liquid cream and blend again until you get a smooth and homogeneous cream.
Cut the veal into thin slices and arrange them on a serving plate.
Season with a drizzle of extra virgin olive oil, salt and pepper.
Cover with the tuna sauce and serve.
