1 lamb breast
100 g bacon
100 g pecorino cheese
1 egg
1 clove of garlic
1 sprig of rosemary
1 sprig of thyme
Extra virgin olive oil as needed
Salt as needed
Pepper as needed

Take the lamb breast and cut it to create a pocket for the filling.
Chop the bacon and pecorino cheese and mix them together with the egg, chopped garlic, rosemary, and thyme.
Fill the pocket of the lamb breast with the mixture obtained and close it with toothpicks.
Heat the extra virgin olive oil in a pan and brown the lamb breast on all sides.
Add a glass of hot water and cover with a lid. Cook over low heat for about an hour, turning the meat occasionally.
When the meat is cooked, remove it from the pan and let it rest for a few minutes before slicing it.
Serve the stuffed lamb breast hot with a sprinkle of pepper.
