🍴 Soft-boiled eggs with broccoli 🍴

🛒 Ingredients 🛒
– 6 eggs
– 500 g broccoli
– 80 g smoked bacon
– 50 g grated grana cheese
– parsley
– 1 spring onion
– 1 garlic clove
– extra virgin olive oil
– salt and pepper.

👨‍🍳 Preparation 👨‍🍳
Clean the broccoli, removing the drier leaves and woody parts.
Detach the florets from the core, removing the hard part of the stem, which should be cut at the base with a small cut.
Wash the florets in cold water and boil them for about 10 minutes in boiling salted water.
When cooked, drain the broccoli well.
Pour two tablespoons of oil into a frying pan and brown the diced bacon, along with chopped onion and parsley and a clove of garlic.
Add the broccoli and sauté for a few minutes.
Discard the garlic and allow to cool.
Crack the eggs into a small dish to check for freshness.
Pour the eggs into a bowl and beat them for a few seconds.
Combine the cheese and broccoli.
Season with salt and pepper.

Pour 2-3 tablespoons of oil into an iron or nonstick skillet.
Let it heat and, then, pour in the egg mixture.
Using a circular motion, tilt the pan so that the mixture evenly covers the bottom.
Cover with a lid and simmer, shaking the pan several times and taking care to change the position of the pan relative to the flame often so that the broccoli omelet has an even color.
When the omelet pulls away from the bottom of the pan (otherwise help yourself with a small spatula to pull it away from the sides) it is a good time to flip it.

Place a plate or lid on top of the skillet, hold it steady with your hand and flip the omelet over.
Put the pan back on the heat, pour in a drizzle of oil or a small piece of butter, and slide the omelet from the plate into the pan so it can cook on the other side.
When cooked, slide the broccoli frittata onto the serving plate and serve.
