🛒 Ingredients 🛒
– 1 kg roast beef
– 2 carrots
– 2 onions
– 2 cloves of garlic
– 1 celery stalk
– 1 bay leaf
– 1 sprig of rosemary
– 1 glass of red wine
– vegetable broth to taste
– extra-virgin olive oil to taste
– salt and pepper to taste

👨‍🍳 Preparation 👨‍🍳
Finely chop the carrots, onions, garlic cloves, and celery stalk.
In a high-sided saucepan, put extra virgin olive oil and the chopped herbs.

Add the bay leaf and a teaspoon of juniper berries.

Cover with vegetable broth and cook for 50 minutes, adding more broth as it begins to recede.
Add the roast and brown it on all sides.

Deglaze with the red wine and allow the alcohol to evaporate.

Cover with vegetable stock and continue cooking for about 2 hours over low heat.
Season with salt and pepper.
