🍴 Pasta with sardines 🍴

🛒 Ingredients 🛒
– 1 kg wild fennel (dill)
– 500 g Sardines
– 600 g pasta Bucatini
– 2 chopped onions
– 6 anchovies
– 50 g pine nuts
– 50 g sultanas
– 50 g toasted almonds
– a pinch of saffron
– home-made olive oil
– salt and red chilli pepper

👨‍🍳 Preparation 👨‍🍳
Boil the finochietti in slightly salted water, where you will then cook the bucatini or other type of pasta. Wash, remove the head and the central backbone of the sardines, which should be opened by holding them together by the back.
Chop the fennel and fry it with the chopped onions, the boned anchovies, the red chilli (optional), the pine nuts, saffron, sultanas, oil and half the sardines.
Boil the bucatini in the fennel water, drain them and mix them with two thirds of the sauce prepared earlier.
Put everything in a pan, cover with the rest of the sardines mashed in the rest of the sauce, sprinkle with toasted almonds, chop and bake for 10 minutes.
