Put the minced beef, sausage, chopped parsley, a pinch of salt, the bread roll soaked in milk and well squeezed out with your hands, the whole egg and the grated Parmesan into a bowl.

With moistened hands, create many meatballs of equal size and place them on a plate.
Roll all the meatballs in the breadcrumbs so that they stick well to each one.

FRIED Heat plenty of peanut oil in a pan or high-sided frying pan and cook the meatballs for about 10 minutes until golden and crispy.
Drain the meatballs on paper towels and serve.

IN THE PAN Heat two or three tablespoons of extra virgin olive oil in a frying pan and, when hot, cook the meatballs first over high heat, then lower the heat and continue cooking for about 20 minutes.

IN THE OVEN Place all the meatballs on a baking tray with greaseproof paper, sprinkle them with extra virgin olive oil and bake in a preheated ventilated oven at 200° for about 30 minutes until fully cooked.

❗ VARIANTS AND ADVICE ❗
You can leave out the sausage but add a clove of chopped garlic.

You can leave out the parsley if you don’t like it.

You can replace the bread soaked in milk with a boiled and mashed potato or ricotta cheese.
